FSM 260: Six Steps for a Safe Stuffed Turkey at Home

From Washington State University Extension, welcome to Food Safety in a Minute.

Recipes for turkey stuffing are plentiful: Online, in newspapers and magazines, and your family recipe file. Ingredients include bread crumbs, butter, onions, herbs, spices, even ground beef, sausage, and seafood. For a safe, delicious stuffing, follow these steps:

  • Cook raw meat or shellfish before adding to stuffing.
  • Use 3/4 cup of stuffing per pound of turkey, stuff loosely.
  • After stuffing, cook immediately in an oven set to at least 325°F.
  • Turkeys that are grilled, smoked, fried, or microwaved should not be stuffed.
  • Ensure the center of the stuffing reaches a minimum safe temperature of 165°F.
  • Let the cooked turkey rest for 20 minutes, remove stuffing and carve.
