FSM 243: Freezing Food from the Garden

From Washington State University Extension, welcome to Food Safety in a Minute.

Are you thinking about freezing food from your garden this summer? Here are five tips
on freezing from the National Center for Home Food Preservation at the University of
Georgia:

  • Your freezer temperature should be zero degrees F or lower. For rapid freezing set
    your temperature control at -10 degrees F or lower.
  • Freeze foods as soon as they are packaged and sealed.
  • Avoid overloading your freezer with unfrozen food. Add no more than two to
    three pounds of food per cubic foot of available storage space in your freezer.
  • Place packaged, unfrozen food in contact with refrigerated surfaces in the coldest
    part of the freezer.
  • Leave space between packages so air can circulate until food is frozen. Then store
    packages close together.
