Welcome to Food Safety in a Minute.
Are you making brisket to celebrate Passover this year? If you’ve already purchased a whole frozen brisket weighing ten pounds, it may take several days to thaw. According to foodsafety.gov, brisket should be thawed in the refrigerator. It’s important to plan ahead.
When cooking, the USDA Meat and Poultry hotline recommends placing brisket fat side up in a baking dish in an oven set no lower than 325 degrees F. Using a meat thermometer, bake until it reaches an internal temperature of 145 degrees F. Then, the brisket should rest at that temperature for three minutes.
