FSM 212: Pies and National Pastry Day: Waste Not, Want Not with Food Safety in Mind

Welcome to Food Safety in a Minute.

Tis’ the season of Christmas, Hanukkah, Kwanza, New Year’s Eve, and National Pastry Day. Often on the dessert menu, you can reduce food waste, save time and energy with food safety in mind by freezing pies and keeping fresh pies with perishable ingredients in the refrigerator.

Martha Zepp of PennState University Extension says if you prepare ahead and freeze unbaked pies, they have a fresher fruit flavor than ones baked before freezing. She recommends placing an unbaked frozen pie in a 450 degrees F oven for 10-15 minutes, then reducing heat to 375 degrees F for 20-30 minutes until crust is browned.

Pies made with eggs, cream, sour cream, cream cheese, evaporated or condensed milk, should not be out of refrigeration for more than two hours. This includes most pumpkin, cream, chiffon, and custard-based pies.
