Did you know norovirus infections cost Americans $2B annually? This contagious, foodborne illness is often linked to poor handwashing practices of an infected person. Billions of virus particles are shed from their GI tracts through vomit and feces, onto their hands, then surfaces. Others touch contaminated surfaces, then food, and swallow the virus particles. Just a few ingested particles may cause illness. Prevention is simple, start with effective handwashing. Before preparing food or eating, wash your hands for twenty seconds using soap and water, drying with a paper towel. It’s also important to clean and sanitize surfaces and avoid sharing utensils or food.
