This is Food Safety in a Minute from Washington State University Extension.

It’s Black History Month. From the 1800’s to the present day, African Americans have made significant contributions to food, food processing, and food safety.

  • Alfred Cralle patented the first ice cream scoop in 1897, still in use today.
  • Alexander Ashbourne changed bakeries by inventing a spring-loaded device that cut multiples of biscuits versus one at a time.
  • Frederick McKinley Jones patented a portable air-cooling unit for delivery trucks ensuring safety of perishable foods. He was inducted to the National Inventors Hall of Fame.
  • Reginald Lewis built Beatrice International, a billon dollar snack food, beverage, and grocery store conglomerate.
