Welcome to Food Safety in a Minute from Washington State University Extension.

Would you like to minimize your family’s risk of foodborne illness during the holidays? The best place to start is your refrigerator. It’s past time to throw out Thanksgiving leftovers. The United States Department of Agriculture and the Food and Drug Administration recommend you throw out leftover turkey, dressing and vegetable side
dishes after three to four days in the refrigerator. Some bacteria can continue to multiply and/or produce a toxin when refrigerated. They could cause foodborne illness.

Given COVID-19 guidelines across the country this year, family celebrations will likely be curtailed. As you prepare special foods for your immediate family this year, there’s likely to be leftovers, freeze them in the first couple of days.
