Fruit leathers are a safe, fun project to with your family. You can use fresh, frozen, or canned fruit to make fruit leathers. Two cups of pureed fruit make a 13 by 15-inch piece of fruit leather. Once you’ve pureed the fruit, add two (2) teaspoons of lemon juice or 1/8th teaspoon of ascorbic acid per two (2) cups fruit pulp. This prevents darkening. You may also add some type of sweetener including saccharin-based sweeteners.
Cover the surface of a shallow pan or cookie sheet with plastic wrap. Pour fruit mixture on the surface spreading to 13 by 15 inches. You can dry the fruit leather in a dehydrator, an oven, or 1-2 days in the sun. For specific directions and recipes visit the National Center for Home Food Preservation.
