This is Food Safety in a Minute from Washington State University Extension.

Have you noticed pumpkin pies at your grocery store are often displayed in the bakery section and not refrigerated? Recipes for pumpkin pie contain perishable ingredients: Eggs, milk, sugar and pumpkin.

Food processors use additional ingredients to ensure shelf stability for a limited time. In Washington State, pies displayed at room temperature in bakeries and grocery stores are labeled with:

  • Wording stating a special recipe was used or the letters RT. RT is a symbol from the American Institute of Baking meaning shelf stable. Labels will also include,
  • A “sell by” or “refrigerate by” date, and the words
  • “Keep refrigerated after purchase.”

Always refrigerate your pie after purchasing.
