Welcome to Food Safety in a Minute from Washington State University Extension, I’m Susie Craig.

Have you ever wondered about the best way to store eggs in your refrigerator? According to the American Egg Board, raw egg shells are best stored in their cartons on the middle or lower shelf of your refrigerator. Carton storage prevents the loss of carbon dioxide and moisture which lowers quality. Refrigerator temperatures have less fluctuation in the middle and lower shelves which also ensures quality.

Refrigerated eggs maintain their quality for about five weeks after the pack date when they are stored properly. For longer storage, beat the eggs until blended, then place them in freezer containers and seal tightly. Label with the date and the number of eggs. Frozen eggs can be stored for up to a year. For food safety, all eggs whether raw or cooked in a prepared dish containing eggs should be refrigerated at or below forty degrees.
