Are the twisted, ropey strands you often see on egg whites safe to eat? Yes, they are. In fact, the more prominent the strands, the fresher the egg is. The strands anchor the yolk in the center of the egg. Composed of protein, they are a natural part of the egg and safe to eat. It isn’t necessary to remove the strands, as they do not interfere with cooking or beating the egg white.

Have you ever eaten a hard-boiled egg and found a greenish ring around the yolk? The greenish ring occurs in eggs that are overcooked or cooled too quickly after cooking. While the color may look unappealing, the eggs have the same nutritional value and are safe to eat. The greenish ring is caused by sulfur and iron reacting on the surface of the yolk during cooking.
