FSM 086: Safely Marinating Meat and Poultry for the Grill

Using a marinade for meat and poultry is a wonderful way to introduce new flavors to summer meals. However, there are important food safety guidelines to follow when you marinate for the grill.

Most marinade recipes include a cooking oil, an acid such as vinegar, citrus juice, or wine, and spices. The acidic ingredients tenderize raw meat and poultry. Recipe instructions may include using a fork or a needle-like injector to infuse the marinade. It is safe to marinate in food-grade plastic bags, stainless steel, or glass containers. Always marinate in the refrigerator

According to the United States Department of Agriculture, it is safe to re-use the marinade as a sauce if it is boiled first to destroy bacteria. For more information, visit Food Safety Inspection Services at the USDA.
