From Washington State University Extension, this is Food Safety in a Minute.
If you’re canning this year, here’s what not to do, ever.
- Avoid using recipes from outdated canning publications, cookbooks, gardening books, internet sites, blogs, social media, and online videos. For safety, follow a tested recipe and directions from the National Center for Home Food Preservation or the latest edition of the Ball Blue Book.
- Never use the wrong lids. Two-piece lids are the accepted standard for sealing jars. Flat metal lids are intended for single use, not to be reused.
- Never use the wrong jars. Canning jars are manufactured to withstand the heat of canning. Other glass jars may break or not assure product safety.
