From Washington State University Extension, this is Food Safety in a Minute.

It’s rare recipes in cookbooks, online, in magazines, or those passed down in the family include safe cooking guidelines in their directions.

Safe minimum internal temperatures as measured with a food thermometer are critical in the prevention of foodborne illness. Add these endpoint temperatures in your recipes:

  • 145 degrees F when cooking roast, steak, and chops from beef, pork, veal, and lamb with a three-minute rest time after removal from heat source,
  • 160 degrees F for ground products from beef, pork, and lamb, for eggs and egg dishes, and
  • 165 degrees F for all poultry, and leftovers.
